About this recipe

Ripe avocado and good toast are the whole dish. Mash the avocado with salt and lemon so it tastes seasoned, not just green.

A poached egg on top should have a set white and a soft center.

Why this recipe works

  • Salt and acid wake up avocado.
  • Thick toast holds the weight.
  • A short poach keeps the yolk soft.

What you’ll need

  • 2 thick slices of bread
  • 1 ripe avocado
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • + 3 more ingredients and 5 steps…

Variations

  • Fry the egg if poaching feels fussy.
  • Add tomato under the avocado.

How to serve

One generous slice per person, egg centered so it can be cut.

Storage and reheating

Most breakfast dishes are best fresh. Pancakes, waffles, and potato hash keep 3 days in the fridge and freeze for up to 2 months — reheat pancakes and waffles in a toaster. Cook eggs fresh each time for the best texture.
